A celebration in Rome for one of the places known for being the guardian and icon of the historic recipe of Fettuccine Alfredo.
On December 1st, the 107th anniversary of the “Alfredo alla Scrofa” restaurant will be celebrated, frequented by characters from the jet set international from all over the world, since 1914.
For the occasion, the “Alfredo alla Scrofa” Award will be established, which aims to honor the characters who contributed to the dissemination of Roman tradition in the world. The recipe for “Fettuccine Alfredo”, a historic symbol of Italian cuisine around the world, is made with fettuccine, egg, butter and parmesan, which makes the dish creamy.
The recipe was born on the initiative of Alfredo DiLelio, who saw his wife weakened after giving birth to one of his children.

Even today the dish is prepared with the same ingredients: a homemade pasta fresh, very thin, dipped for 30 seconds in boiling water.
The procedure requires the pasta to be drained from the pan into a deep dish, into which fresh butter is placed at room temperature and covered with a very fine parmesan. The preparation is done in front of the customer.
