According to the AISE agency, the Terra Madre Salone del Gusto 2026 will take place from September 24th to 27th in the center of Turin, featuring flavor workshops, dinners, and tastings that bring together ingredients and gastronomic traditions from countries such as Azerbaijan, South Korea, the Dominican Republic, Uganda, Ivory Coast, Indonesia, Turkey, and Latin American countries. The 16th edition is organized by Slow Food, the Piedmont Region, and the City of Turin, with support from Masaf and Ismea.

The program includes a workshop on honey from the Azerbaijani village of Likit, used in traditional local sweets; a tasting of wild herbs harvested on the South Korean island of Ulleung; and a comparative tasting of cocoa beans from different origins, showing how soil, climate, and fermentation alter the fruit's profile.
